- 1 cut up chicken
- vegetable oil
- salt and pepper
- flour
- sliced green peppers
- 1 can sliced pineapple, drained (but save the juice)
- 3/4 c. cider vinegar
- 2 Tbsp. soy sauce
- 3 Tbsp. cornstarch
Directions

1Add to water to pineapple juice to make 1 1/4 cups liquid. Wash chicken.

2Pat dry.

3Coat with flour, salt and pepper.

4Brown in oil.

5While chicken is browning, combine remaining liquid ingredients in a saucepan.

6Cook until boiling, stirring constantly.

7Stir in cornstarch, which has been mixed with a small amount of water or pineapple juice, to make a thin paste.

8Cook 2 minutes longer.

9Pour over chicken, which has been placed in a casserole dish.

10Bake, covered, for 30 minutes.

11Add pineapple and green pepper.

12Cook, uncovered, for an additional 30 minutes longer.
