- 1/2 cup barbecue sauce
- 1/2 cup orange juice
- 1/4 cup packed brown sugar
- 2 tablespoons canola oil
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt, optional
- 4 cups cubed cooked chicken
- 1 can (8 ounces) pineapple chunks, drained
- 1 can (8 ounces) sliced water chestnuts, drained
- 1-1/2 teaspoons ground ginger
- Hot cooked rice
Directions

1In a large saucepan, combine the first six ingredients until smooth. Bring to a boil; reduce heat and simmer for 2 minutes, stirring occasionally.

2Add the chicken, pineapple, water chestnuts and ginger; cover and simmer for 10 minutes or until heated through. Serve with rice.
