Pineapple Chicken(Diet)

Ingredients
- 1 c. crushed pineapple in its own juice
- 1/4 c. soy sauce
- 1 Tbsp. water
- 1 Tbsp. vinegar
- 2 tsp. prepared mustard
- 2 pkg. artificial sweetener
- 2 large, skinless chicken breasts
- 1/2 tsp. ground ginger
- 1 c. sliced, fresh mushrooms
Directions

1In a small saucepan, combine the pineapple, soy sauce, water, vinegar, mustard and ginger.

2Heat until mixture begins to boil. Remove from heat and add sweetener.

3Place chicken in a shallow baking dish.

4Pour marinade over chicken making sure they are well coated.

5Refrigerate at least 2 hours or overnight.

6Bake, covered, at 400° for 30 minutes.

7Add mushrooms; baste chicken and mushrooms with marinade.

8Continue to bake, covered, for 15 minutes.

9Remove cover and bake 30 minutes more or until chicken is browned and liquid is absorbed; baste during browning.

10Serve over rice or noodles.
