- 2 teaspoons olive oil
- 1 cup diced onion
- 2 teaspoons minced fresh thyme or 1 teaspoon dried thyme
- 1/4 teaspoon pepper
- 3/4 cup long grain rice or 3/4 cup basmati rice
- 1 1/2 cups diced fresh pineapple
- 1 cup water
- 1/2 cup chopped green onion
- 1/2 cup pineapple juice
- 2 tablespoons flaked coconut
- 1/2 teaspoon salt
Directions

1Heat olive oil in a large saucepan over medium heat.

2Add diced onion, thyme and pepper; saute 2 minutes.

3Add rice and cook 1 minute.

4Stir in pineapple and remaining ingredients; bring to a boil.

5Cover, reduce heat and simmer 20 minutes or until rice is done and liquid is absorbed.
