Pineapple Cream Cake

- 2 c. sugar
- 3/4 c. vegetable oil
- 2 eggs, beaten
- 1 (20-oz.) can crushed pineapple
- 2 c. flour
- 1 tsp. baking soda
- 3/4 tsp. salt
- 1 tsp. vanilla
- 8 oz. cream cheese
- 1/2 stick butter
- 2 Tbsp. pineapple juice
- 2-3 c. sifted powdered sugar
Directions

1Cream sugar and oil together; add eggs.

2Drain pineapple and save 2 tbsp. juice for the icing.

3Add remaining juice and pineapple to creamed mixture.

4Sift together flour, soda and salt. Add to pineapple mixture with the vanilla.

5Pour into greased 9 x 13 pan and bake at 350 degrees for 30-45 minutes.

6For icing, melt cream cheese and butter over low heat.

7Add reserved pineapple juice and enough powdered sugar to make spreadable.

8Beat well to remove any lumps.

9Pour over hot cake.
