Pineapple Crumb Tart

Ingredients

  • 1/2 c. margarine
  • 1 1/2 c. confectioner sugar
  • 2 eggs, beaten
  • 1 c. crushed pineapple (small can)
  • 1/2 c. crushed nuts
  • 2/3 box vanilla wafers (46 wafers)
  • 1 c. whipping cream

Directions

    Cream margarine and sugar until fluffy.

    Add eggs and beat until creamy. Roll wafers and place 1/2 of crumbs in an 8-inch square pan. Place creamed mixture on top. Spread pineapple over that. Whip cream. Add nuts to it. Place this over top of pineapple. Cover with rest of crumbs.

    This must stand 8 hours in refrigerator. Serves 9. Not for dieters.
