Pineapple Dream Pie

  • 1 1/3 c. flaked coconut
  • 3 oz. pkg. lemon jello
  • 1 1/4 c. milk
  • 1/3 c. frozen pineapple juice concentrate, thawed
  • 1 Tbsp. butter, melted
  • 3 1/4 oz. pkg. vanilla tapioca pudding mix
  • 8 3/4 oz. can crushed pineapple, drained
  • 1 carton Cool Whip

Directions

    Combine coconut and butter.

    Press into pie pan and bake at 325° for 15 minutes.

    Cool.

    In saucepan, combine gelatin and pudding and stir in milk.

    Cook until mixture boils.

    Remove from heat.

    Stir in concentrate and chill until partially set.

    Fold in Cool Whip.

    Add pineapple and pour into crust.

    Chill 5 to 6 hours.
