- 1 (20 ounce) can pineapple slices, drained
- 1 cup pancake mix
- 3/4 cup water
- 1 teaspoon vanilla
- powdered sugar
Directions

1Heat oil to 375.

2Lay pineapple slices on platter lined with paper towels to soak up any excess juice.

3In a shallow bowl, whisk together pancake mix, water and vanilla. Batter will be slightly lumpy.

4Coat pineapple slices in batter.

5Fry in hot oil 1-2 minutes per side until golden brown.

6Place donuts on another plate covered with paper towels to drain. Sprinkle with powdered sugar.
