- 1 can (14 Oz. Size) Pineapple Rings & Juices (reserve Juices)
- 1/2 cups Finely Diced Red Onion
- 2 whole Limes (washed, Zest And Juice)
- 2 dashes Salt
- 1 Tablespoon Balsamic Vinegar

1On a greased grill or griddle pan over medium-high heat, place pineapple rings in a single layer. Grill for 2-3 minutes on each side. Remove pineapple to a clean work surface to cool.

2In a mixing bowl add finely diced red onion, lime zest and juice, salt and reserved pineapple juice. Stir to combine. Cut grilled pineapple rings in small pieces and add it into the mixing bowl. Add balsamic vinegar. Stir with a spatula to incorporate ingredients.

3Cover bowl with plastic wrap and refrigerate several hours before serving. Enjoy!
