- 1 (20 oz.) crushed pineapple
- 1/4 c. sugar
- 3 Tbsp. cornstarch
- 1/4 tsp. salt
- 3 egg whites
- 3 egg yolks
- 2 Tbsp. butter or margarine
- 1 Tbsp. lemon juice
- 1 baked 9-inch pie shell
Directions

1Heat pineapple in saucepan.

2Mix sugar thoroughly with cornstarch and salt.

3Add all at once to hot pineapple and cook, stirring briskly, until thick and clear.

4Beat egg yolks in bowl. Stir in a little of the hot mixture, then return all to saucepan; cook, stirring for 1 minute.

5Remove from heat; stir in butter and lemon juice.

6Pour into baked pie shell and spread roughly, covering in meringue.
