Pineapple Mint Mold

  • 1 (20 1/2 oz.) can crushed pineapple
  • 1 envelope unflavored gelatin
  • 1 (10 oz.) jar mint jelly
  • 1 container whipping cream
  • 1 tsp. confectioners sugar
  • dash of salt

Directions

    Drain pineapple; keep syrup and place in saucepan.

    Soften gelatin in syrup.

    Add jelly and dash of salt.

    Heat and stir until all dissolved and jelly melted.

    Stir in pineapple; chill until mixture is thickened and syrupy.

    Whip cream with sugar until stiff; fold into mixture.

    Spoon into mold and freeze.

    Let stand at room temperature 15 minutes before serving.
