- 2 1/4 c. oat bran cereal
- 1/4 c. brown sugar
- 1 Tbsp. baking powder
- 1/2 c. evaporated skim milk or skim milk
- 1 (16 oz.) can crushed pineapple
- 2 egg whites
- 2 Tbsp. vegetable oil
Directions

1Preheat oven to 425°; mix dry ingredients in a large bowl. Mix milk and 1/2 of pineapple and juice, egg whites and oil in a bowl or blender.

2Combine the ingredients and mix; drain the second half of the pineapple and add to mixture.

3Line the muffin pan with paper baking cups and fill with batter.

4Bake for 17 minutes.

5Makes 12 muffins.
