- 1 (20 oz.) can crushed pineapple, drain and reserve 2 Tbsp.
- 2 c. all-purpose flour
- 1 tsp. baking soda
- 1 (3 oz.) pkg. cream cheese, softened
- 1 egg
- 1 c. sugar
- 2 tsp. vanilla
- 1/2 c. sour cream
- Glaze
Directions

1Combine flour and baking soda.

2Set aside. Cream together cream cheese and sugar in a large mixing bowl. Add vanilla and egg.

3Mix. Add dry mixture alternately with sour cream.

4Stir in pineapple.

5Pour into lightly greased muffin pan.

6Bake at 350° for 20 to 25 minutes.

7Yields 24 muffins.
