Pineapple Nut Bread

Ingredients

  • 2 c. sifted flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2 Tbsp. butter or oleo
  • 1/2 c. boiling water
  • 1 c. sugar
  • 1/3 c. pineapple juice
  • crushed pineapple as desired (usually smallest size can is enough), drained
  • 1 egg, slightly beaten
  • 2 tsp. vanilla
  • 1 c. chopped nuts

Directions

    Sift the dry ingredients and set aside.

    Melt butter in boiling water; add sugar, pineapple juice, crushed pineapple, egg, vanilla and nuts, all in the same bowl, and mix well.

    Add dry ingredients, mixing only until flour disappears.

    Bake at 350° for 1 hour or until done.

    Use 1 pound loaf pan.
