Pineapple Nut Bread

Ingredients

  • 1/2 c. raisins, in boiling water
  • 1 3/4 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. soda
  • 3/4 c. nuts
  • 3/4 c. sugar
  • 3 Tbsp. shortening
  • 2 eggs
  • 1 (8 1/2 oz.) crushed pineapple (do not drain)
  • 2 Tbsp. sugar
  • 1/2 tsp. cinnamon

Directions

    Mix sugar, shortening and eggs; add pineapple. Add flour, baking powder, salt, soda, raisins and nuts.

    Pour into a bread loaf pan and top with sugar and cinnamon.

    Mix this together. Bake at 350° for 60 to 70 minutes. Makes 1 loaf.
