Pineapple Nut Bread

Ingredients

  • 2 c. flour
  • 1/2 c. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. golden raisins
  • 1/2 c. milk
  • 1 egg, beaten in milk
  • 1 tsp. vanilla
  • 2 1/2 tsp. oil
  • 1 tsp. baking soda
  • 1 (8 oz.) can crushed pineapple
  • 1/2 c. nutmeats

Directions

    Mix dry ingredients.

    Stir in nuts and raisins.

    Dissolve baking soda in the pineapple and add with rest of ingredients to dry mixture.

    Bake in a bread pan at 350° for about an hour, or until it tests done.

    Cool on rack; wrap in plastic and store in refrigerator.

    This will keep for a long time.
