Ingredients

  • 3 c. flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 c. margarine
  • 2 c. sugar
  • 3 eggs
  • 2 c. grated carrots
  • 1/2 c. chopped walnuts
  • 1 can crushed pineapple
  • 2 tsp. vanilla

Directions

    Sift together flour, baking soda, baking powder, cinnamon and salt.

    Cream margarine and sugar.

    Add eggs; beat until fluffy. Stir in dry ingredients, carrots, walnuts, pineapple (undrained) and vanilla.

    Mix well.

    Pour into greased 13 x 9 x 2-inch pan. Bake in 350° oven for 55 to 60 minutes.
