Ingredients

  • 3/4 c. sugar
  • 1/3 c. oleo, melted
  • 2 eggs
  • 1 (8 oz.) can crushed pineapple (undrained)
  • 1 3/4 c. flour
  • 1/2 c. golden raisins (optional)
  • 2 1/2 tsp. baking powder
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  • 1 c. quick cooking or regular oats
  • 1/2 c. chopped pecans

Directions

    Grease bottom only of loaf pan.

    Mix sugar, oleo, eggs and pineapple in large bowl.

    Stir in remaining ingredients except oats and nuts.

    Stir in oats and nuts.

    Pour into pan.

    Bake at 350° for 55 to 60 minutes.

    Cool 10 minutes.

    Loosen sides of loaf from pan; remove and cool completely before slicing.

    Store tightly wrapped in fridge.
