- 1 (29 oz.) can pineapple chunks
- 3/4 c. cider vinegar
- 1 c. sugar
- 6 cloves allspice
- 3 whole cloves
- 1 (3-inch) stick cinnamon
- 1 tsp. powdered coriander seed
- dash of salt
- 1 to 2 drops red food coloring
Directions

1Drain pineapple, save 3/4 cup of syrup.

2Put 3/4 cup syrup and all ingredients (except pineapple chunks and coloring) in saucepan.

3Cook, uncovered, for 15 minutes.

4Add pineapple and boil briskly for 5 minutes.

5Remove from heat and add food coloring.

6Cool and pour into jar with tight fitting lid and refrigerate at least 24 hours.

7Serve very cold.

8Yields 20 servings.
