- 2 Tbsp. cornstarch
- 1/2 c. sugar
- 1/4 tsp. salt
- 1 Tbsp. butter
- 1 Tbsp. lemon juice

Directions

1Line 9-inch pie pan with pastry.

2Combine pineapple, cornstarch, sugar and salt and cook until thick and clear, stirring constantly.

3Add lemon juice and butter.

4Cool slightly. Pour into pastry-lined pan.

6Bake in 425° oven for 25 to 30 minutes (if using unsweetened pineapple, increase sugar by 2 tablespoons).
