Pineapple Pie

Ingredients

  • 3 big or 4 small eggs, separated
  • 1 c. water
  • 5 Tbsp. flour
  • 2 c. sugar (this may be sweeter than desired; if so, cut to 1 1/2 c. sugar)
  • 1/8 tsp. salt
  • 1 small can crushed pineapple (8 1/4 oz.)
  • 1 Tbsp. margarine
  • 1/2 tsp. vanilla
  • 2 (9-inch) baked shells, cooled

Directions

    Combine sugar, flour and salt.

    Add water to beaten egg yolks, then pour into sugar mixture.

    Mix well.

    Add pineapple and butter.

    Cook and stir over medium heat until mixture boils and thickens.

    Remove from heat.

    When cool, add vanilla.

    Pour into pie shells.
