- 1 (20 oz.) can crushed pineapple
- 2/3 c. sugar
- 2 Tbsp. cornstarch
- 1 Tbsp. butter
- 1 Tbsp. lemon juice
- pastry for 9-inch pie
Directions

1Place pineapple in saucepan.

2Mix together sugar and cornstarch, add to pineapple.

3Bring to boil over medium heat and cook, stirring, 2 minutes or until thick and clear.

4Remove from heat, add butter and lemon juice.

5Line pie pan with pastry, pour in filling, adjust top crust or make lattice strips.

6Bake at 425° for 25 to 30 minutes or until golden brown.
