Pineapple Pork Pies

  • 1 1/2 lb. ground pork
  • 1 (10 3/4 oz.) can condensed cream of mushroom soup
  • 1 (4 oz.) can sliced mushrooms, drained
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 (20 oz.) can pineapple rings
  • 3/4 c. chopped onion
  • 1/2 tsp. thyme, crushed
  • 3 Tbsp. brown sugar

    Prepare pastry; divide into 6 portions.

    On floured surface, roll each portion into a 7-inch circle.

    Fit each circle into a 5-inch tart pan; press out all bubbles.

    Do not prick.

    Flute edges.

    Cook pork and onion until meat is brown and onion is tender; drain.

    Add soup, mushrooms, seasonings and mix well. Spoon into tart shells; top each shell with a pineapple ring; sprinkle with brown sugar.

    Bake in 375° oven for 25 minutes or until pastry is golden brown.

    Garnish with bacon curls if desired.
