  • 1 c. butter or margarine, softened
  • 2 c. sugar
  • 3 eggs
  • 3 c. flour
  • 1/3 c. powdered milk
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 3/4 c. pineapple juice
  • 1/2 tsp. vanilla
  • 1 c. flaked coconut
  • 1/4 c. lemon juice

    Preheat oven to 350°.

    Cream together butter and sugar.

    Add eggs one at a time, beating well each time.

    Sift flour with powdered milk, baking powder and salt.

    In a separate bowl, combine pineapple juice, lemon juice and vanilla extract.

    Add flour mixture alternately with juice mixture to creamed butter and sugar, beating well with each addition.

    Add coconut, stirring well.

    Pour into greased and floured 10-inch tube pan.
