- 1/2 c. sugar
- 1/3 c. flour
- 1/4 tsp. margarine
- 1/4 tsp. salt
- 2 eggs
- 1 small can crushed pineapple
- 1 1/2 c. water
- 12 coconut macaroon cookies
- 1 small size carton whipped topping
Directions

1In heavy saucepan, mix thoroughly the sugar, flour and salt. Add eggs and pineapple; mix well.

2Add water and butter.

3Cook until thick.

4Remove from heat.

5Crumble 6 cookies into a 1 or 1 1/2-quart dish.

6Top with half the pudding.

7Cover with the other 6 cookies.

8Add remaining pudding.

9Chill.

10When cold, spread whipped topping over top.

11Refrigerate.
