  • 8 graham crackers made into crumbs
  • 1 Tbsp. plus 1 tsp. soft margarine
  • 2 c. skim milk
  • 1 pkg. lo-cal vanilla pudding mix
  • 2 c. pineapple chunks
  • 1 c. frozen whipped topping

Directions

    Preheat oven to 350°.

    In small bowl, mix crumbs and margarine.

    Press into 8 x 8 x 2-inch pan.

    Bake until lightly browned (10 minutes).

    Remove and cool.

    Using 2 cups skim milk, prepare the pudding.

    Pour over crumbs.

    Top with pineapple. Spread topping over pudding.

    Cover and refrigerate until chilled.
