Pineapple Rice Pudding

  • 1 C. uncooked rice
  • 3 C. milk
  • 3 tsp. butter
  • 1/2 tsp. salt
  • 1/2 C. sugar
  • 3 eggs, beaten
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • 2 C. pineapple, sweet

Directions

    Cook rice. Combine cooked rice with milk, salt, sugar, eggs, vanilla and pineapple. Pour into 1 1/2 quart baking dish. Sprinkle with cinnamon. Cover with foil. Place on bottom of oven, watch so it doesn't burn. Cook about 30 minutes at 350 degrees or until done.
