- 2 cups milk
- 3/4 cup heavy cream
- 1/4 cup granulated sugar
- 1 vanilla bean seeds scraped out
- 3 1/2 ounces rice medium grain pudding
- 1/2 pineapple peeled, cored, finely chopped
- ground cinnamon to serve
Directions

1Bring milk, cream, sugar, vanilla bean and bean seeds to a boil. Add rice then reduce heat and simmer, uncovered, stirring frequently, for about 30-35 mins, until rice is tender and creamy. Add pineapple and cook for another 1-2 mins. Serve warm sprinkled with cinnamon.
