Pineapple Salad

  • 1 (15 oz.) can diced pineapple
  • 1 c. miniature marshmallows
  • 1 c. chopped pecans
  • 1 Tbsp. vinegar
  • 3 Tbsp. sugar
  • 1 Tbsp. cornstarch
  • 1 Tbsp. butter or margarine
  • 1 egg, well beaten
  • 1 c. whipped cream

Directions

    Drain and save juice from pineapple.

    Combine pineapple, marshmallows and pecans in bowl and set aside.

    In small saucepan, combine pineapple juice, vinegar, sugar, cornstarch, butter and egg; cook over medium heat until smooth and thickened.

    When sauce has cooled, pour over pineapple mixture and chill several hours. Just before serving, fold in whipped cream.

    Serve cold.
