Pineapple Slaw

  • 4 c. shredded cabbage
  • 1 (6 1/2 oz.) crushed pineapple, drained
  • 1 c. shredded Cheddar cheese
  • 1 c. diced pimento, drained
  • 1/4 c. diced onion
  • 1/4 c. mayonnaise
  • 1 Tbsp. lemon juice
  • 1/8 tsp. pepper
  • 1/4 c. whipped cream
  • 1/3 c. chopped, toasted pecans

    Combine first 5 ingredients; chill at least 1 hour.

    Just before serving, combine mayonnaise, lemon juice and pepper; stir. Fold in whipped cream.

    Pour over slaw; toss gently.

    Garnish with chopped pecans.
