Pineapple Spinach Salad

  • 1 (20 oz.) pineapple chunks
  • 4 slices bacon, fried or microwaved crisp
  • 1 bunch spinach, washed and stemmed
  • 1/2 c. sliced celery
  • 1/2 c. raisins
  • 1/2 small red onion, sliced thinly
  • 1 clove garlic, minced
  • 1/3 c. cider vinegar
  • 1 Tbsp. vegetable oil
  • 1/8 c. sugar
  • salt and pepper to taste

Directions

    Drain pineapple.

    Reserve 1/2 cup juice for dressing.

    Mix pineapple with bacon, spinach (torn in pieces), raisins, celery and onion.

    Combine reserved pineapple juice with garlic, vinegar, oil and sugar.

    Add to salad and toss.

    Salt and pepper to taste.
