Pineapple Upside-Down Cake

  • 1 stick butter
  • 1 c. light brown sugar, packed
  • 1 (20 oz.) can crushed pineapple, drained
  • 1 box yellow cake mix
  • 1/3 c. oil
  • 3 eggs
  • 1 c. pineapple juice

Directions

    Melt butter and sugar in 10-inch iron skillet.

    Add pineapple; cook, stirring, for about 15 minutes, over low heat.

    Cool.

    In bowl, mix cake mix, oil, eggs and pineapple juice thoroughly. Pour mixture into skillet on top of pineapple mixture.

    Do not stir.

    Bake at 350° for 30 minutes.

    Loosen cake from edge of skillet with a knife; turn out on plate while hot.
