Pineapple Upside-Down Cake

- 1 stick butter
- 1 c. light brown sugar, packed
- 1 (20 oz.) can crushed pineapple, drained
- 1 box yellow cake mix
- 1/3 c. oil
- 3 eggs
- 1 c. pineapple juice
Directions

1Melt butter and sugar in 10-inch iron skillet.

2Add pineapple; cook, stirring, for about 15 minutes, over low heat.

3Cool.

4In bowl, mix cake mix, oil, eggs and pineapple juice thoroughly. Pour mixture into skillet on top of pineapple mixture.

5Do not stir.

6Bake at 350° for 30 minutes.

7Loosen cake from edge of skillet with a knife; turn out on plate while hot.
