Pineapple Upside-Down Cake

Ingredients
- 1 can (12 oz.) crushed pineapple
- 3 Tbsp. butter or margarine
- 1/2 c. brown sugar
- 1/3 c. shortening
- 1/2 c. sugar
- 1 egg
- 1 tsp. vanilla
- 1 c. all-purpose flour
- 1 1/4 tsp. baking powder
- 1/4 tsp. salt
Directions

1Drain pineapple, saving juice.

2Melt butter.

3Mix with brown sugar and 1 tablespoon pineapple juice in 8 x 8 x 2-inch pan. Spread pineapple on bottom of pan.

4Cream together shortening and sugar until smooth.

5Add remaining ingredients and 2/3 cup pineapple juice and mix at high speed until most lumps are gone. Pour into pan and bake at 350° for 40 to 45 minutes.

6Cool for 5 minutes.

7Turn over on large plate.

8Serve.
