Pineapple Upside-Down Cake

Ingredients

  • 1 can (12 oz.) crushed pineapple
  • 3 Tbsp. butter or margarine
  • 1/2 c. brown sugar
  • 1/3 c. shortening
  • 1/2 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 c. all-purpose flour
  • 1 1/4 tsp. baking powder
  • 1/4 tsp. salt

Directions

    Drain pineapple, saving juice.

    Melt butter.

    Mix with brown sugar and 1 tablespoon pineapple juice in 8 x 8 x 2-inch pan. Spread pineapple on bottom of pan.

    Cream together shortening and sugar until smooth.

    Add remaining ingredients and 2/3 cup pineapple juice and mix at high speed until most lumps are gone. Pour into pan and bake at 350° for 40 to 45 minutes.

    Turn over on large plate.
