- 1/3 c. margarine
- 1/2 c. brown sugar
- 1 large can sliced or crushed pineapple, drained
- 2 eggs
- 2/3 c. sugar
- 6 Tbsp. fruit juice (from pineapple)
- 1 tsp. vanilla
- 1 c. flour
- 1/3 tsp. baking powder
- 1/4 tsp. salt
- approximately 10 pecan halves
Directions

1Melt margarine in heavy 10-inch skillet.

2Sprinkle brown sugar over melted margarine.

3Drain juice from pineapple and reserve. Arrange drained fruit and pecans over margarine-sugar coating. Beat until thick and lemon colored the 2 eggs.

4Add sugar. Gradually beat in pineapple juice and vanilla.

5Beat in flour, baking powder and salt.

6Pour batter over pineapple arrangement. Bake 45 minutes at 350°.
