Pineapple Upside-Down Cake

- 2 c. flour
- 1/2 c. shortening
- 1 c. sugar
- 2 eggs
- 2 tsp. baking powder
- 1 tsp. salt
- 3/4 c. pineapple juice
- 1/4 c. butter
- 1 c. brown sugar
- pineapple slices and cherries
Directions

1Melt butter and brown sugar on low; heat in cake pan or skillet.

2Place pineapple slices and cherries in bottom of pan. Combine dry ingredients alternately with pineapple juice until well blended and pour over pineapple slices.

3Bake at 350° for 45 to 50 minutes.

4Makes 9 or 10-inch cake.
