Pineapple Upside-Down Cake

Ingredients
- 3 Tbsp. butter
- 1/2 c. brown sugar, packed
- 7 pineapple slices, well drained (save juice)
- 1/3 c. softened butter
- 1/2 c. sugar
- 1 egg
- 1 tsp. vanilla
- 1 1/4 c. flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. pineapple juice liquid
Directions

1Preheat oven to 350°.

2Melt butter (3 tablespoons) in a 9-inch layer pan in oven.

3Sprinkle brown sugar over butter.

4Arrange fruit in sugar mixture in pan.

5Mix 1/3 cup butter with sugar until creamy.

6Add egg and vanilla.

7Beat well.

8Mix flour, baking powder and salt thoroughly.

9Mix pineapple juice into creamy batter. Spread batter over fruit in the pan.

10Bake at 350° for 35 to 40 minutes.

11Cool a few minutes in pan (so topping doesn't run). Loosen cake from sides of pan.

12Place service plate over pan and turn over.
