Pineapple Upside-Down Cake

- 1/4 c. butter or margarine
- 1/2 c. brown sugar
- 5 to 7 slices pineapple
- 2 Tbsp. reserved pineapple juice
- maraschino cherries
- 1 pkg. yellow cake mix or your favorite yellow cake recipe
Directions

1Melt butter, brown sugar and 2 tablespoons of pineapple juice in a saucepan.

2Spray sides and bottom of a cake pan.

3Pour brown sugar mixture into it.

4Arrange pineapple rings and cherries on top.

5Prepare cake mix according to directions on package, or make your favorite cake recipe and pour over mixture in cake pan.

6Bake in a 350° preheated oven for 40 to 45 minutes.

7Let stand to cool a few minutes, then invert onto a plate.
