Pineapple Upside Down Cake

- 1 small can pineapple ring, drained
- 125 g margarine
- 125 g caster sugar
- 2 eggs
- 100 g self raising flour
- 1 teaspoon baking powder
Directions

1Preheat oven to 180c (gas mark 4).

2Line and grease an 8 inch cake tin.

3Arrange pineapple rings onto the base of the tin.

4Melt together 25g of the margerine and 25g of the caster sugar and pour over the pineapple.

5Beat together all the remaining ingredients until fluffy and smooth and spoon over the fruit.

6Bake for 25-35 minutes and serve hot or cold with custard, cream or ice cream.
