Pineapple Upside Down Cake

  • 1 small can pineapple ring, drained
  • 125 g margarine
  • 125 g caster sugar
  • 2 eggs
  • 100 g self raising flour
  • 1 teaspoon baking powder

Directions

    Preheat oven to 180c (gas mark 4).

    Line and grease an 8 inch cake tin.

    Arrange pineapple rings onto the base of the tin.

    Melt together 25g of the margerine and 25g of the caster sugar and pour over the pineapple.

    Beat together all the remaining ingredients until fluffy and smooth and spoon over the fruit.

    Bake for 25-35 minutes and serve hot or cold with custard, cream or ice cream.
