- 3 Tbsp. butter
- 2/3 c. brown sugar
- 4 slices pineapple, cut in 1/2
- 1 c. and 2 Tbsp. sifted self-rising flour
- 2/3 c. sugar
- 1/4 c. shortening
- 1/2 c. milk
- 1 tsp. vanilla
- 1 egg
Directions

1Preheat oven to 350°.

2Melt butter in one 9-inch pan. Sprinkle brown sugar over butter and arrange pineapple in pan. Sift into one bowl flour, sugar and shortening.

3Use slightly over 1/2 of the milk.

4Beat 2 minutes.

5Add remaining milk, egg and vanilla.

6Beat 2 minutes.

7Turn into prepared pan.

8Bake 30 to 35 minutes.
