Pineapple-Zucchini Bread

- 1 1/2 c. sugar
- 1 c. vegetable oil
- 3 eggs, beaten
- 2 tsp. vanilla extract
- 1 c. crushed pineapple, drained
- 2 c. shredded zucchini
- 1/2 c. chopped walnuts
- 1 c. raisins
- 3 c. all-purpose flour
- 2 tsp. baking soda
- 1/2 tsp. baking powder
- 3 tsp. cinnamon
Directions

1Beat together sugar, oil, eggs and vanilla.

2Stir in the pineapple, zucchini, walnuts and raisins.

3In a separate bowl, combine the flour, baking soda, baking powder and cinnamon.

4Add to zucchini mixture. Mix just until well blended.

5Pour into 2 greased 8 1/2 x 4 1/2-inch loaf pans.

6Bake at 350° for 1 hour.
