  • 2 cups sugar
  • 1 cup oil
  • 1 tablespoon vanilla
  • 1 cup crushed pineapple with juice
  • 2 cups grated zucchini (unpeeled)
  • 1 cup chopped nuts (optional)
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder

Directions

    Mix all ingredients at once. Beat well. Grease and flour pans. Bake at 325° for 1 hour 15 minutes for large pans and 1 hour for small pans. Use 2 large loaf pans or 3 small loaf pans.
