Pineapple Zucchini Bread

- 3 eggs
- 1 c. oil
- 2 c. sugar
- 2 tsp. vanilla
- 2 c. shredded zucchini
- 1 (8 1/4 oz.) can crushed pineapple drained
- 3 c. flour
- 2 tsp. baking soda
- 1 tsp. salt
- 1/2 tsp. baking powder
- 1 1/2 tsp. cinnamon
- 3/4 tsp. nutmeg
- 1 c. walnuts and/or raisins
Directions

1Beat eggs.

2Add oil, sugar and vanilla.

3Beat until foamy. Stir in zucchini and pineapple.

4In separate bowl, mix flour, soda, salt, baking powder, spices, fruit and nuts until blended. Stir gently into zucchini mixture just until blended.

5Spoon equally into 2 greased and flour dusted loaf pans.

6Bake at 350° for 1 hour or until bread pulls away from the side of the pans. Cool in pans for 10 minutes.
