Pineapple Zucchini Bread

  • 3 eggs
  • 1 c. oil
  • 2 c. sugar
  • 2 tsp. vanilla
  • 2 c. shredded zucchini
  • 1 (8 1/4 oz.) can crushed pineapple drained
  • 3 c. flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • 3/4 tsp. nutmeg
  • 1 c. walnuts and/or raisins

Directions

    Beat eggs.

    Add oil, sugar and vanilla.

    Beat until foamy. Stir in zucchini and pineapple.

    In separate bowl, mix flour, soda, salt, baking powder, spices, fruit and nuts until blended. Stir gently into zucchini mixture just until blended.

    Spoon equally into 2 greased and flour dusted loaf pans.

    Bake at 350° for 1 hour or until bread pulls away from the side of the pans. Cool in pans for 10 minutes.
