- 2 tsp. vanilla
- 2 c. shredded zucchini
- 1 (8 oz.) can crushed pineapple, well drained
- 3 c. flour
- 1 tsp. salt
- 1 tsp. soda
- 1/2 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. nutmeg
Directions

1Beat first 4 ingredients together, then add next 2 ingredients.

2Sift together remaining ingredients and beat into the liquid.

3Bake muffins for 30 minutes at 350°.

4Bake loaf or Bundt pan 1 hour at 350°.
