Ingredients
- 3 eggs
- 2 c. sugar
- 1 c. oil
- 3 c. flour
- 1 tsp. salt
- 1 (8 oz.) can crushed pineapple (undrained)
- 3 Tbsp. vanilla
- 2 c. peeled and grated zucchini, well drained
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 c. chopped walnuts
- 1/2 c. raisins (optional)
Directions

1Preheat oven to 350°.

2Grease and flour 2 (9 x 5-inch) loaf pans.

3Beat eggs until fluffy.

4Add sugar, oil and vanilla.

5Blend well.

6Add zucchini.

7Sift together flour, baking powder, soda and salt.

8Add to batter.

9Stir in pineapple, nuts and raisins (if desired).

10Mix well.

11Turn into pans and bake 1 hour.

12Cool on wire rack before removing from pans.

13Wrap and store overnight to develop flavor before slicing.
