- 4 c. flour
- 2 1/2 c. sugar
- 4 tsp. soda
- 4 tsp. cinnamon
- 1 tsp. salt
- 4 c. grated carrots
- 1 c. chopped pecans
- 2 apples, grated
- 1 c. raisins
- 1 c. coconut
Directions

1Sift together flour, sugar, soda, cinnamon and salt.

2Stir in carrots, pecans, apples, raisins and coconut.

3In a bowl, beat 6 eggs, then add 2 cups Mazola oil and 4 teaspoons vanilla.

4Stir in flour/fruit mixture until combined.

5Spoon batter in well oiled muffin tins.

6Bake at 350° for 20 minutes or until muffin springs back when touched.

7Let cool 5 minutes.

8Yields 36 regular sized muffins.
