  • 3 tablespoons butter
  • 14 cup all-purpose flour
  • 1 tablespoon onion, finely grated
  • 12 teaspoon salt
  • 14 teaspoon dry mustard
  • 14 teaspoon Worcestershire sauce
  • 1 pinch cayenne
  • 34 cup milk
  • 34 cup tomato juice
  • 1 12 cups cheddar cheese, shredded

Directions

    Melt butter in top of double boiler.

    Blend in flour, onion, salt, dry mustard, Worcestershire sauce and cayenne.

    Gradually stir in milk.

    Cook over direct heat until smoothly thickened, stirring constantly.

    Remove from heat and gradually stir in tomato juice.

    Place over hot, not boiling, water and add cheese.

    Stir constantly until cheese is melted.

    Serve on toast, with a tossed salad.
