- 1 lb. ground beef
- 6 yellow plantains
- 8 oz. green beans, cooked
- 8 oz. Cheddar cheese, finely cut or grated
- 3 eggs, separated
- 2 Tbsp. oil
- 1 medium onion, chopped
- 1 green pepper, chopped
- 2 cloves garlic
- 2 red peppers, chopped
- 3 leaves coriander, ground
- 1 leaf cilantro
- 1 packet sazon with saffron
- 4 oz. raisins (optional)
- 2 Tbsp. tomato sauce
- 2 Tbsp. sugar
- salt and pepper
Directions

1Stir-fry garlic in oil.

2Add peppers, onion, coriander, cilantro, tomato sauce and sazon.

3Add meat and season well; cook 30 minutes, stirring occasionally.

4Fry plantains, cut in pieces. Grease an 8 x 12 x 2-inch pan and place plantains in bottom.

5Add meat mixture, spread evenly and press down.

6Add grated cheese, then green beans.

7Make another layer of plantains.

8Beat egg whites; add yolks to sugar.

9Cover the dish with this meringue. Bake at 325° for 15 minutes.

10To brown, place under broiler for 5 minutes.

11Cut and eat.
