Ingredients

  • 1 c. sugar
  • 1/4 c. butter
  • 2 eggs
  • 1 c. flour
  • 1/2 tsp. salt
  • 1 tsp. soda
  • 1/2 tsp. allspice
  • 1/2 tsp. cloves
  • 1/2 tsp. cinnamon
  • 2 c. pinto beans, cooked and mashed
  • 1 c. raisins
  • 1 c. chopped nuts
  • 1 tsp. vanilla
  • 2 c. apples, diced

Directions

    Cream sugar, butter and eggs.

    Add mashed beans.

    Sift all dry ingredients together; add to sugar mixture.

    Add apples, raisins, nuts and vanilla.

    Pour into greased and floured pans.

    Bake at 375° for 45 minutes, or until done.

    May be baked in oblong, tube or Bundt pan.

    Good plain, or frost with caramel icing.
