Pinto Bean Cake

  • 1/2 cup (125 ml) margarine
  • 2 cups (475 ml) sugar
  • 2 eggs
  • 2 cups (475 ml) refried beans or pinto beans
  • 1/2 cup (125 ml) chopped nuts (toasted pecans are wonderful)
  • 1-1/4 cups (300 ml) flour
  • 1/2 tsp (2 ml) baking powder
  • 1 tsp (5 ml) cinnamon
  • 1 tsp (5 ml) baking soda
  • 1/2 tsp (2 ml) ground cloves
  • 1/2 tsp (2 ml) ground allspice
  • 1 cup (225 ml) brown sugar
  • 1/4 cup (60 ml) milk
  • 1/2 cup (125 ml) butter or margarine
  • 1 tsp (5 ml) vanilla

Directions

    Cream margarine, eggs and sugar.

    Put fully cooked pinto beans through a blender or food processor until they are soft and smooth and no lumps.

    Add the beans to creamed mixture alternately with the sifted dry ingredients.

    Add nuts.

    Bake in greased and floured 9x13-inch pan 1 hour or until done.

    Glaze immediately, or no longer than still warm to the touch, and pour over the glaze.

    Mix sugar, milk and butter butter in a heavy saucepan.

    Boil 5 minutes, stir in vanilla.

    Pour over hot cake.

    Hint: I often times add mini-chocolate chips to this cake's batter before it goes into the oven, and we love the chocolate added in!
