Pinto Bean Pie

  • 1 c. cooked pinto beans or 1 can
  • 1 small can coconut
  • 1 c. chopped nuts (pecans)
  • 4 whole eggs
  • 3 c. sugar
  • 1 Tbsp. vanilla
  • 2 sticks melted oleo
  • 3 unbaked pie shells

Directions

    Mash beans well (use juice).

    Beat eggs; add all other ingredients and mix well.

    Pour into 3 unbaked pie shells.

    Bake 45 minutes to 1 hour at 300°.

    Makes 3 pies.

    (Freezes well.)
